Evan & Gina
Buchholz.
Evan trained at Le Cordon Bleu and spent twenty-plus years cooking in restaurants from Virginia to Washington DC to St. Louis. Gina grew up in Troy. She runs the front of the house, he runs the kitchen.
Since December 2022 they have owned Cleveland-Heath in Edwardsville. Market & Main is their next move — a restaurant they get to build from the ground up, in Gina's hometown, with a bigger kitchen and a different idea.
Building it from
the ground up.
Cleveland-Heath was someone else's restaurant first. Evan and Gina inherited it, kept what mattered, and brought back the dishes that made it. They love that room.
Market & Main is different. This is their concept from day one. The building was the American Legion. The kitchen is theirs. The menu is whatever Evan has been thinking about for fifteen years and never had the room to cook.
Cleveland-Heath belongs in Edwardsville. We're going to be something else out there.

The Market & Main address used to be the American Legion Post 708. Brick, single story, big front. We're keeping the brick and putting a roll-up garage door across the front of the dining room.
Eighty seats inside, no outside tables. When the weather is right we'll roll the door up and let Main Street in. A larger kitchen than Cleveland-Heath. A bar built for slinging beers and pours of something interesting.
First Friday in Troy is going to be our preview night. After that, regular service begins.
